Societe Brewing Co. - The Apprentice IPA
Short History
Debuting in 2012 as one of the original beers on Societe Brewing’s board, The Apprentice is a liquid tribute to the "Old Guard" of West Coast IPAs. Founded by Travis Smith—a former protégé of Vinnie Cilurzo at Russian River Brewing—Societe focused on the "ABCs" of IPA brewing: Aptitude, Brilliance, and Community. While sales briefly dipped over the years, the beer has seen a triumphant return and remains a foundational pillar of the San Diego craft beer scene, representing the brewery's "Out West" family of hop-forward ales.
Key Features
-
Classic West Coast Profile: A decidedly hoppy and bitter American IPA that stays true to its San Diego roots with a crisp, bone-dry finish.
-
Trio of Pacific Northwest Hops: Expertly brewed with Amarillo, Simcoe, and Centennial hops to provide a multi-layered aromatic experience.
-
Light Malt Backbone: Utilizes a simple 2-row barley grain bill to ensure the malt remains a subtle support, allowing the hop character to shine through without distraction.
-
High Attenuation: Fermented with American ale yeast to "kill the sugar," resulting in a light-bodied, 7.2% ABV beer that is exceptionally drinkable.
-
Independent Craft Heritage: Proudly brewed and packaged by an independently-owned brewery in Kearny Mesa, San Diego.
Tasting Notes
-
Appearance: Pours a bright, clear golden with a resilient white head and persistent lacing.
-
Nose: An assertive bouquet of pungent pine resin and bright citrus zest, featuring distinct notes of grapefruit and orange peel.
-
Palate: A medium-bodied "beast built for speed." Initial flavors of bitter grapefruit and resinous dankness lead the charge, supported by subtle spicy undertones and a hint of bready malt.
-
Finish: Exceptionally clean, dry, and gritty. The bitterness is assertive and lingering, leaving a refreshing citrus astringency on the tongue.
Awards & Distinctions
The Apprentice has been recognized both as a professional standard and a inspiration for homebrewers:
-
Silver Medal: Won at the San Diego International Beer Festival in 2013 for the American-Style India Pale Ale category.
-
National Homebrew Recognition: The recipe won Third Place at the National Homebrewers' Conference in 2015 and was featured in Societe's "Homework Series" to inspire new brewers.
-
High Critic Ratings: Consistently earns high marks (97+ overall style scores) on platforms like RateBeer and Untappd for its adherence to the traditional West Coast style.
Overall Expression
The Apprentice is the definition of "Savvy, Piney, and Gritty." It is a no-nonsense IPA for those who value hop power over sweetness. While many modern IPAs lean into tropical fruit and "juice," The Apprentice remains a steadfast guardian of the classic, pine-forward San Diego style. It is a "regret-free" choice for any Beer Folk looking for a sophisticated, well-rounded craft experience that barrels through the finish line with every pour.
