These lemons, a Lisbon variety that became popular in New Zealand for their quality, are hand-zested and macerated before distillation, alongside eight other botanicals. This gin is crafted in small batches using natural spring water and is inspired by the Cape Palliser Lighthouse. It aims for a bright, balanced, and clean profile with a lower juniper presence, emphasizing the citrus notes. Bottled at 40% ABV.
