Cava de Oro Tequila Plata is a premium, unaged tequila that embodies the pure essence of blue Weber agave. Crafted in the heart of Jalisco, Mexico, this tequila is produced using traditional methods that highlight the rich heritage of the region.

Production Process:

The journey begins with the careful selection of mature blue Weber agave plants, cultivated in the highlands of Jalisco. These agaves are harvested at peak maturity to ensure optimal sugar content. The piñas (agave hearts) undergo slow cooking, a process that preserves the soft and sweet flavors of the agave. After cooking, the agave is traditionally crushed using a tahona—a large volcanic stone wheel—to extract the rich juices. This ancestral method enhances the depth and complexity of the tequila's flavor profile. The extracted juice undergoes wild fermentation in wooden vats for approximately 120 hours, increasing the richness and complexity of the spirit. Distillation occurs in copper pot stills, which allows for precise control and preserves the agave's natural flavors while producing a smooth, refined spirit. The tequila is then rested for a short period before bottling, resulting in a bright, crystalline appearance that reflects its purity. 

Tasting Notes:

• Aroma: The nose presents crisp and fresh aromas of bright agave, citrus zest, and a touch of peppery spice. 

• Palate: On the palate, soft textures allow the true character of cooked agave to shine, complemented by subtle notes of caramel. A light vanilla character is introduced during the entry and carries forward through the whole experience. Cinnamon emerges mid-way through the development, joined by a few cracked peppercorns for added heat. A hint of grilled lime floats over top, keeping the mouth watering. 

• Finish: The finish is soft and sweet, reaffirming the tequila's character and leaving a lasting impression that invites enthusiasts to savor the authenticity and purity of Cava de Oro Plata.

Cava de Oro is produced by the Partida family, one of the oldest and largest agave growers in the Tequila region, with a legacy spanning over six generations. All of their premium tequilas are made from 100% estate-grown agave and are meticulously crafted under the guidance of Master Tequilero Alberto Partida.
